  • 2 carrots (small, peeled and julienned)
  • 1 zucchini (large, julienned)
  • 1 cup broccoli florets
  • 1/2 onion (medium, chopped)

  • 2 flour tortillas (large)
  • 2 teaspoons cream cheese, softened
  • 1 tablespoon dijon mustard
  • 2 tablespoons parsley (minced)
  • 3 tablespoons olive oil

    Directions

    1. Spritz the grill with cooking spray and grill the vegetables on medium-high heat until cooked thoroughly.
    2. Whisk together the mustard, parsley, and olive oil to make the dressing.
