  • 2 pizza crusts (prepared, about 14 inch)
  • 1 1/2 cups pizza sauce (tomato)
  • 1 medium zucchini (trimmed)
  • 3 1/2 ounces cherry tomatoes (halved)
  • 2 tablespoons olive oil
  • 7 ounces feta cheese (crumbled)
  • 2 tablespoons fresh oregano

    Directions

    1. Preheat the oven to 425°F. Spread the pizza sauce over the crusts, leaving a 1 inch border at the edge. Using a potato peeler, slice the zucchini into long, thin slices. Arrange zucchini and tomatoes over top of pizza. Drizzle with olive oil and bake for 15-20 minutes until the pizza crust is golden.
    2. Remove from the oven and sprinkle with the crumbled feta cheese and fresh oregano. Season generously and serve.
