    This was super good and easy! I can’t eat cashews so I replaced with cauliflower. I know, complete opposite from what a cashew is. But it worked out super good! I did it as a pase and cook a few chunks of it in the soup as well. And added a pinch of chili power to the amount that I blended.

    This was amazing! It's also very forgiving if you make any mistakes. I put in too much onion so I cooked it longer for a sweeter taste. The broccoli becomes so tender and lovely with the softened onion and carrots. The soup is a deep brown before you add the cashews, don't freak out if it doesn't look like the picture yet! The cashews add a nice texture and flavor. Deff going in the rotation.

    My kids and I loved this! I even put some shredded cheddar cheese on the table in case they needed it. No one did. It tasted just like traditional broccoli cheese soup. We served it in bread bowls from Panera.

    Very good, added 4 cubes of frozen spinch to purree mix, soup wasn't green enough, I know its supposed to be golden!

    Delicious! Loved the inspiration as a starting point. Added cauliflower that was going bad, and extra carrot cuz I have too many, shallots, garlic, a splash of red wine vinegar, garlic powder, a little cumin and some nutritional yeast... pretty much made my own version. Left a bowlful of cooked veggies out before blending and put em back in so there’s a little something to chew on. Definitely easy and morphable.

    Excellent recipe! I’ve made it several times now. I have non-vegan kids who ask for it, now! My granddaughter is vegan & loves it also! I will add this to my favorites. I also added medley potatoes to my last pot I made & there were no leftovers with the potatoes! (Who am I kidding, there’s never any leftovers)

    I like it, but need to add something to make it more savoury (too sweet for my taste). Could not bldnd cashews very smooth, could still feel them, but awerall great heslthy soup. Will make itsgain with small changes.
