    Directions

    1. Preheat oven to 350 degrees and line baking sheets with parchment paper.
    2. Cream butter and sugar with an electric mixer until combined, but not fluffy. Add egg, vanilla, and rum and mix until smooth.
    3. In a separate bowl stir together sifted rice flour, cornstarch, polenta, salt, baking powder, and baking soda.
