  • 1 cup sugar
  • 2 teaspoons corn starch
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3/4 cup dark corn syrup
  • 1/8 teaspoon clove
  • 3 tablespoons margarine
  • 1 cup sweet potatoes (Mashed)
  • 3 eggs (slightly beaten)
  • 1/4 cup pecans (chopped)
  • 1 pie crust (9 In, unbaked)

    Directions

    1. Mix sugar, cornstarch, salt and spices in sauce pan. Stir in corn syrup, butter, and sweet potatoes. Boil for 3 minutes or till slightly thickened.
    2. Remove from heat and stir gradually into slightly beaten eggs. Pour into pie shell. Sprinkle pecans over top. Bake at 400 for 10 minutes- reduce heat to 350 and bake 35-40 minutes longer.
