  • 1 1/2 pounds chicken breast (cut into strips)
  • 1 1/2 pounds yellow potatoes (baby, quartered)
  • 1 tablespoon olive oil
  • 3 tablespoons butter (divided)
  • 5 garlic cloves (minced)
  • 1 teaspoon fresh thyme (chopped)
  • 1 teaspoon fresh rosemary (chopped)
  • 1 teaspoon fresh oregano (chopped)
  • salt
  • cracked pepper
  • red chili pepper flakes (Crushed, optional)
  • 1/3 cup soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon hot sauce (we used Sriracha)

This got a rave review from my husband, and I loved it as well. It's going in my family favourites list right now. The only things I changed were using dried spices (fresh herbs are hard to come by where I live for most of the year or are very expensive) and a bit of a change the cooking method to save time, where I cooked the chicken in the marinade while the potatoes were boiling, then fried the potatoes in the same pot they were boiled in and added the chicken and marinade into the pot. As I say, this was delicious and so easy, and I will definitely make it again.

Seriously way better than I’d imagined. It took a while for the sauce to absorb, so the timing of the recipe didn’t quite match up, but I was really surprised by how good it turned out. Definitely adding this to my collection f usual recipes.

A little bit too spicy, but other than that great! Next time my only corrections would be to boil the potatoes for the entire 8 minutes, instead of the 6 that I did... and add less Red Pepper Flakes.

The potatoes were too soft to brown in the pan so we made mashed potatoes. I think if you don’t peel potatoes they may hold up better than ours did after boiling

It had great flavor, but DEFINITELY toooo salty. I will try this again, but either use low-salt soy sauce or don’t put the marinade in the pan at the end...or do both.
