This French-style potato salad makes for a great dish to serve at a cookout. The potatoes are cooked then cooled before being dressed in a delicate dressing. The dressing is made of red wine vinegar, parsley, and mixed provencal herbs making for a flavorful bite each time. The simple flavor of the potatoes gets a huge kick from the dressing, this dish is a great accompaniment to just about any protein choice.

  • 2 potatoes (medium)
  • 1/2 teaspoon salt
  • pepper (to taste)
  • 1 1/2 tablespoons red wine vinegar
  • 1/3 cup olive oil
  • 2 tablespoons water
  • 1/2 tablespoon onion (finely chopped)
  • 2 tablespoons parsley (finely chopped)
  • 1 teaspoon herbs (provencal)

    Directions

    1. Cook the potatoes in a pot of water with salt until they become soft.
    2. Strain, peel, and cut the potatoes into thin slices. Set them aside for later.
    3. Mix the rest of the ingredients together in a bowl.
    4. Dip the potato slices in the dressing, making sure that each slice is completely covered.
    5. Serve the potato slices on a plate.
