  • 1/2 white onion (small, diced)
  • 2 garlic cloves (minced)
  • 1 head broccolini (cut into florets)
  • 1/2 tablespoon dried rosemary (or fresh, minced)
  • 2 small tomatoes (sliced)
  • 1/4 cup Parmesan cheese (shredded, optional)
  • 1 tablespoon olive oil

    Directions

    1. Preheat oven to 425°F and prep the vegetables
    2. Place the pizza in the oven and set the timer for 10 minutes
    3. While the pizza cooks, heat a saucepan over medium-high heat and add the olive oil. Sauté the onions for about 2 minutes, then add the garlic, broccolini and rosemary. Cover and cook for another 8 minutes, or until the broccolini begins to soften
    4. Remove the pizza from the oven and layer on the sliced tomatoes, the broccolini mixture, and the optional garnish of Parmesan
    5. Place the pizza back in the oven and finish baking for 3-5 minutes. Remove the pizza and enjoy!
