These were soooo fluffy and delicious. I've been trying to find a good pancake recipe that is thick and fluffy, but not dense. These were exactly what I was looking for. Instead of using vinegar, i used 3 tablespoons of Almond extract. They were scrumptious and a huge hit with my family and friends.

Dang......I used Apple Cider Vinegar instead of white vinegar......... I sampled the first bite with no toppings on the pancake and I couldn't stop eating, they were delicious. In my forty years of cooking this recipe easily made the BEST pancakes I have ever tasted. They are thick, but using medium heat they cooked through perfectly.
