This recipe is a keeper. You’d expect to be served a slice in the best cafes in Europe or wherever… and it’s got very little sugar in it… will be making it again! And by the way this recipe makes a lot more than 4 servings - at least 8.

It’s very tasty. I mash the raspberries more and strain out their seeds which is a long process but often with it. If you do this it is easier to strain the seeds if you cook them at a rapid boil after mashing for about 2-6 minutes .
