  • 2/3 pound spaghetti
  • 1/3 pound cheddar cheese (grated)
  • 2 tablespoons oil
  • 8 fish sticks (frozen)
  • 1 green bell pepper (small, cut into thin rings and deseeded)
  • 1 onion (peeled and finely diced)
  • 1 teaspoon all-purpose flour
  • 3 teaspoons curry powder
  • 2/3 cup vegetable stock
  • 2/3 cup whole milk (or 2%)
  • 1 spring onion (cut on a bias)

    Directions

    1. Preheat oven to 400°F. Grease a 10 inch casserole dish. Cook spaghetti in boiling salted water according to package instructions. Drain and set aside. Mix with 1/2 the cheese and place in prepared dish.
    2. Meanwhile, heat 1 tbsp oil in a frying pan and cook fish sticks until golden brown. Remove from heat and set aside on paper towels. Clean the pan and heat 1 tbsp oil. Sauté pepper until softened, then remove and set aside. Add onion and sauté for 2 mins. Sprinkle with flour and curry powder, then add stock and milk, stirring. Bring to a boil, stirring constantly, and simmer for 2 mins. Season then add 1/2 the spring onion. Add to the casserole dish. Arrange fish sticks, peppers and remaining spring onion on top and sprinkle with remaining cheese. Bake for 10 mins, until golden brown.
