  • 1 1/2 pounds jumbo shrimp
  • 1/2 cup bread crumbs (flavored)
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup melted butter
  • 1 clove garlic (minced)
  • 1 tablespoon parsley (minced)
  • 3 tablespoons lemon juice

    Directions

    1. Cooking time: 15 to 20 minutes. Remove shells from shrimp and devein, leaving tail. Wash under running water, drain on paper towels. Split shrimp along back curve, cutting almost in half. Open shrimp and press flat.
    2. Mix remaining ingredients well and stuff shrimp. Close shrimp with toothpicks (or leave open if you wish). Arrange in buttered baking dish. Bake in preheated 350 degree oven 15 to 20 minutes.
    3. Optional: after baking, place baking dish under broiler for 3 minutes. Optional: shrimp may be basted with mixture of 1/2 cup white wine and 3 tablespoons lemon juice before baking.
