Description

Following a low-carb diet, or just love avocados and need something new for breakfast? Try this fun and healthy idea. The recipe is a Yummly original created by Sara Mellas.

  • 2 avocados (extra-large)
  • salt
  • black pepper
  • 4 eggs

    Directions

    1. Preheat the oven to 400°F.
    2. Slice the avocados in half and discard the pits. Use a spoon to scoop out a portion of the flesh from the center of each half, leaving a 1/2-inch border of flesh in the skin. Reserve the scooped-out avocado flesh for another use. (Pro Tip: Use the largest avocados possible to ensure that a full egg can fit inside!)
    3. Arrange the avocado halves cut side up in a square baking dish. Sprinkle the cavities with salt and black pepper. Carefully crack an egg into the center of each half and season with additional salt and black pepper to taste.

    Simple, easy to make and looking to incorporate more avocado in my diet. I enjoyed it, but my young kids didn’t really like it (but they can be fussy)..

    Not a fan of avocados, but I enjoyed trying something new. I can describe this recipe with a comment my girlfriend made: “so you’re just eating avocado with a sunny side egg?” Yep.

    Wasn’t that good. That avocados were kind of bitter after baking and the dish itself was bland. Will not make again.

    I’ve made this before, but I enjoy mine with just the egg yolk spooned in the avocado. That way, you get more avocado yumminess and don’t have to worry about egg overflow!

    This was really good, but I didn’t quite dig out enough of the avocado I left it a bit too long in the over, but can adjust timing the next time I make it. I had some sliced tomatoes on the side
