  • 4 pounds pork butt (boneless, trimmed of excess fat)
  • 26 ounces tomatillos (whole, drained and puréed with an immersion blender or blender. Can also use 2 cups of fresh tomatillos.)
  • 3 green onions (or 1 small yellow onion, chopped)
  • 1/2 cup cilantro (chopped)
  • 3 cloves garlic (minced)
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lime (large)

    Directions

    1. Place pork in slow cooker. Cover the pork with all the ingredients EXCEPT the lime and optional accompaniments. Place lid on top of slow cooker and cook on high for 6 hours or low for 8 hours.
    2. Remove pork from slow cooker and shred into pieces with two forks. Place back in slow cooker in the sauce or on platter and squeeze juice from 1 large lime over the pork. Serve with optional accompaniments, if desired.
