    Delicious. I didn't use a whole red onion. Next time I will cut back on the oil the parmesan cheese has a lot of oil too when it's cooked. We put diced chicken on top. Yum.

    It was great. I cut up the vegetables in advance, so making this was a breeze.

    This was super easy to make! I’m not a fan of peppers so I doubled the sweet potatoes and it was fantastic. Going to make this again

    I traded beets for sweet potatoes and it worked nicely. Easy to execute
