  • 1 pound chicken breast (organic, cut into small pieces)
  • marinade
  • 3 cloves garlic (minced)
  • 3 tablespoons olive oil
  • 1/2 cup tomato juice (I often omit if I don't have it)
  • 1/2 cup lime juice (about 2-3 + extra for wedges)
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1 teaspoon pepper
  • 8 corn tortillas
  • 1 red pepper (sliced)
  • 3 jalapeños (sliced)
  • 1 onion (sliced)
  • cilantro (to top)
  • rice (Optional:)

    Directions

    1. Mix all the marinade ingredients together in a large bowl or large ziploc bag.
    2. Add the chicken pieces and mix into the marinade.
    3. Place in dish and marinate 8 hours or overnight, turning once or twice.
