    I really liked this recipe, the coconut flour coating on the chicken was light and crisp. I did tweek the sauce ingredients by using honey to taste instead of the recommended sweetener. I also used the zest and juice from 3 small lemons and increased the chicken broth to 1 cup. I used 1 T. of tapioca flour instead of the xanthan gum and finished the sauce with some salt and vinegar for extra tartness. I didn't mix the chicken in with the sauce but poured it over the top. While this recipe is not quite the same as a Chinese lemon chicken I will definitely make this again.
