  • leg of lamb (A small)
  • 1 1/2 quarts water
  • 2 onions
  • 1 carrot
  • 3 stalks celery
  • 1 bunch parsley
  • 1 tablespoon chopped parsley
  • 1 bay leaf
  • 4 1/2 ounces butter
  • 2 1/2 ounces flour
  • 3 egg yolks
  • lemon juice
  • 4 ounces mushrooms (quartered and cooked)

    Directions

    1. Boil for 45 minutes a small leg of lamb in a quart and a half of water, two onions, one carrot, a few stalks of celery. a small bunch of parsley and one bay leaf.
    2. Remove the leg of lamb, strain the cooking liquor and reduce to one-third.
    3. Melt two and a half ounces of butter in a saucepan and mix into this two and a half ounces of flour.
