  • 2 slices granary bread (or wholemeal)
  • 10 grams Flora Light (spread)
  • 2 dried apricots (no-need to soak, chopped)
  • 5 grams light mayonnaise (Hellman’s)
  • 1 teaspoon mango chutney
  • mild curry paste (to taste)
  • 20 grams cooked chicken (diced)
  • lettuce leaves

    Directions

    1. Spread the bread slices with Flora Light spread.
    2. In a small bowl mix together the apricots, mayonnaise, mango chutney and curry paste, and stir in the chicken pieces.
    3. Top one slice of bread with the chicken mixture.
    4. Cover with the lettuce leaves and top with the remaining slice of bread and serve.
