  • 2 onion (large, finely chopped)
  • 2 teaspoons olive oil
  • 2 teaspoons meat
  • 1 pound extra lean ground beef
  • 1 quart beef stock (simmer to reduce to 2 cups, I used my homemade beef stock, but you can use two cans beef broth. Don't reduce for stovetop cooking.)
  • 15 ounces black beans (rinsed and drained)
  • 15 ounces pinto beans (refried)
  • 14.5 ounces tomatoes (petite dice)
  • 2 tablespoons cilantro (dried)
  • 2 tablespoons chile powder (preferably New Mexico chile powder)
  • 2 tablespoons ancho powder (or 2 T more regular chile powder)
  • 1 tablespoon ground cumin
  • 1/4 cup lime juice (fresh squeezed, plus sliced limes to squeeze into chili if desired)
  • 1/2 cup chopped cilantro fresh (plus more for garnish if desired)
  • low-fat sour cream (for serving if desired, optional)

    This one is a keeper. Though i made the following substitutions out of necessity; Ground turkey Chicken Stock Reg Pintos instead of refried. Rotele Tomatoes for diced tomatoes **I Was very pleased with how it turned out
