  • 400 grams chopped tomatoes (tin of)
  • 200 milliliters vegetable stock
  • 1 tablespoon tomato puree (/paste)
  • 1 tablespoon olive oil
  • 1 brown onion (small, peeled and chopped finely)
  • 1 clove garlic (peeled and crushed)
  • 150 grams arborio rice
  • 75 milliliters white wine (optional, replace with stock if you'd prefer)
  • 50 milliliters double cream
  • 30 grams Parmesan (grated, or other cheese if you prefer)
  • 1/2 lemon
  • 1 pinch salt (and black pepper)
  • 3/4 tablespoon butter
  • 1/4 teaspoon salt (Maldon, or just a good pinch of normal salt)
  • 2 cloves garlic (peeled and crushed)
  • 30 grams panko breadcrumbs (or 30g grated slightly stale bread)
  • 1 teaspoon chives (chopped, or parsley)
  • 1/2 lemon
  • 20 grams Parmesan (grated, or other cheese if you prefer)

    This may be the best thing I've eaten since covid started! It was simply wonderful. I wish there was more though — we didn't see the serving size of 2 when we started making it. I recommend 2x or 4x the amounts because you'll want more!
