  • 4 salmon fillets (skin off, or Trout)
  • salt
  • pepper
  • 2 teaspoons olive oil
  • 2 tablespoons butter
  • 6 cloves garlic (finely diced)
  • 1 small yellow onion (diced)
  • 1/3 cup dry white wine (do not use a sweet white wine)
  • 1 strip oil
  • 5 ounces sun dried tomato
  • 1 3/4 cups milk (or half and half, reduced fat, skim or full fat milk *SEE NOTES)

  • 3 cups baby spinach leaves
  • 1/2 cup grated Parmesan cheese (fresh, do not include for dairy free option)
  • 1 teaspoon cornstarch (cornflour mixed with 1 tablespoons of water, optional**)
  • 1 tablespoon fresh parsley (chopped)

    Most of the steps to make the sauce were missing so ended up with a disgusting mess that looked like vomit.

    Slightly modified, I had forgot to buy cream so used creme fraiche and a bit of full fat milk to thin it down. Absolutely delish, even my 9 & 10 year old boys loved it! Would work well with chicken too.

    Love this recipe and so does my family. Sometimes I use chicken. Other times shrimp, crab meat or salmon. Delicious.

    This was absolutely delicious. I also decided to substitute the milk for heavy cream which ended up being a great consistency for the sauce. I also threw in some fresh basil. The sun-dried tomatoes listed in this recipe really bring out a wonderful flavor.

    I changed a few thing, put 3 tbs butter 3 cups of heavy cream and added capers.
