Coconut and Pineapple Friands

  • 6 egg whites
  • 13 tablespoons butter (melted)
  • 3/4 cup ground almonds
  • 2 cups powdered sugar (sifted)
  • 1/3 cup flour (sifted)
  • 7 ounces candied pineapple (finely chopped)
  • 2 ounces shredded coconut

    Directions

    1. Preheat oven to 400°F. Line a 12 cup oval friand pan with paper liners. For the batter, place egg whites in a medium bowl and whisk lightly with a fork until combined. Add butter, ground almonds, powdered sugar, flour, pineapple and 1/2 the coconut. Stir until combined. Divide mixture between liners and sprinkle with remaining coconut. Bake 20 mins. Cool 5 mins before transferring to a wire rack to cool completely.
