Coconut Curry

  • 4 cups zucchini (cubed)
  • 1 cup green peas
  • 2 cups coconut milk
  • 1 onion (sliced or chopped)
  • 4 garlic cloves (minced)
  • 1/2 cup water
  • 2 tablespoons curry powder (I prefer to make my own)
  • 1/2 teaspoon sea salt

    Directions

    1. Place coconut milk in a saucepan on medium high heat, add onion and garlic and cook for about 2 minutes.
    2. Stir in curry powder and cook for another 2 minutes.
    3. Next add zucchini and water and cook on simmer for 15 minutes.
    4. Stir in peas and salt and cook for 1 minute.
    5. Serve over brown rice or your favorite starch or whole grain.
