    I followed the recipie exact. unfortunatly they stuck to the muffin cases and the middle was very 'pancake' like. I wouldn't call these muffins...they tasted nice though.

    Really scrummy. Texture a bit more rice pudding than bread, but somehow it works. I used regular flour and dairy milk. I added approx 1/4 cup desiccated coconut. My mixture was quite runny and I poured, rather than scooped into tins. Easy to make and will make again. I got 12 regular sized muffins.
