  • 4 tablespoons extra virgin olive oil
  • 440 grams skinless chicken breast
  • 900 milliliters chicken stock
  • 1 pinch saffron
  • 1 onion (large, finely chopped)
  • 3 garlic cloves (crushed)
  • 227 grams chopped tomatoes
  • 31 grams parsley (pack flatleaf, leaves roughly chopped and half the stalks reserved)
  • 1 teaspoon paprika
  • 250 grams paella rice (Spanish)
  • 285 grams roasted peppers (drain and rinse them)
  • 1 lemon (cut into wedges)

    I’m not normally a paella lover, but I made this for my husband who loves paella. However, I was pleasantly surprised to find I enjoyed this. I didn’t have the roasted peppers so I added Bell peppers instead and some crushed chilliest to give it spice which most paella’s seem to miss. I will definitely be doing this again

    It was very good. Subbed pork and chorizo, cooked them with yellow and green peppers, and used a bit more rice than called for since I added extra meat and veg. I did stir the rice lightly before topping with ingredients just because I’ve had trouble in the past with cooking everything evenly when left unstirred.

    The paella was very good. The directions for making it were somewhat convoluted. I will definitely make it again but will alter the method to make it simpler.
    I add some seafood to the recipe and turn out to be excellent, it’s a keeper

    Really tasty and easy recipe to follow, left out a couple of ingredients (lemon and saffron) but added chorizo and it turned out really well :) would definitely recommend.

    As far as I can tell, paella rice doesn't exist near me so I swapped in a medium grain rice. Took longer to absorb all the liquid than expected. Not sure if that was the rice or something else though. Canned tomato flavor seemed to take over the dish, didn't taste paprika or roasted red pepper at all.
