  • 1/4 cup light brown sugar
  • 2 Tbsp. all purpose flour
  • 2 tsp. brewed coffee granules
  • 1/2 tsp. ground cinnamon
  • 10 Tbsp. unsalted butter (cold, divided)
  • 2 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1/2 cup unsalted butter (cold)
  • 1 cup greek yogurt
  • 1 large egg
  • 20 mL pure vanilla extract
  • 1 cup confectioners sugar
  • 3 Tbsp. coffee concentrate

    Directions

    1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
    2. In the bowl of a food processor, fitted with a steel blade, add the brown sugar, flour, coffee granules and cinnamon. Pulse a few times to combine. Add 2 tablespoons of butter and pulse again making course crumbs. Pour into a small bowl, set aside.
    3. Return processor bowl to the base and refit the steel blade. To the bowl add, the flour, sugar, baking powder, baking soda, and salt. Pulse a few times to combine. Slice the remaining butter and add to the food processor, pulse again about 7 times.

    The concept of cinnamon and coffee works well. Taste is 4 stars. However amounts and methods are lacking. Not having a specialized blender, I used the standard method. My recommendation is to use a scone recipe you like. I prefer to use a recipe with buttermilk. Use the cinnamon filler, skip the old coffee grounds. Espresso freeze dried has fine crystals. Roll out to 12"x10" then cover with filling. Leave a 1/2" border around entire rectangle. Roll and cut 12 to 8 triangles. This should eliminate the need to pinch edges. The glaze melt 1 tbp. of butter, 1 tbsp freeze dried espresso mix, 1 cup powder sugar add heavy cream till consistancy of heavy syrup.
