  • 1 onion (large, peeled and chopped)
  • 8 carrots (peeled and cut in large slices)

  • 2 pounds chuck steak (cubed, stewing beef or braising steak)
  • 1/4 cup flour
  • 2 freshly ground pepper
  • 3 tablespoons tomato puree (tomato paste, in the UK)
  • 1 1/2 cups beef stock
  • 1/4 cup soy sauce (you can used reduced sodium soy sauce for this recipe)
  • 1/4 cup sherry (or Madeira)
  • 1 teaspoon ground ginger
  • 1/4 teaspoon freshly ground pepper
  • 1 tablespoon brown sugar
  • 3 cloves garlic (peeled)
  • 1 cup sliced mushrooms
  • 8 scallions (spring onions, shredded)
  • 2 cups rice (I like to use Basmati)
