    So yum and filling. Mine didn't come out of the pan intact, but then again my vegan omelettes never do 😅 Great for Keto as only 4.2% net carbs when cooked. I used about 12cm of leek, 2 silverbeet leaves, 5 cherry tomatoes, plus salt, pepper, italian herbs and nutritional yeast flakes in the batter.
    Maybe it's just me, as I have trouble making egg omelettes at the best of times, but mine just didn't solidify. Maybe I put in too much water, I don't know. I'll try to refine it next time. It's fairly bland without any seasoning, so be generous with the onion and herbs.
