- 4 ancho chile peppers
- 4 chile peppers
- 1 tablespoon instant coffee
- 2 tablespoons sesame seeds
- 1/2 teaspoon oregano
- 1/4 teaspoon cumin
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon coriander seeds
- 2 roma tomatoes
- 1/2 onion
- 1/4 cup almonds
- 1/4 cup raisins
- 2 cloves garlic
- 1 tortilla
- 1/2 bar chocolate
- chicken broth
- 2 tablespoons oil
- chicken breast
- salt
Directions
- Place the pasilla, ancho, and guajillo chile peppers, coffee, sesame seeds, oregano, cumin, cinnamon, coriander, tomato, onion, almonds, raisins, garlic, tortilla or bread, and chocolate into a pan. Add the chicken broth and set aside for an hour before blending together in the blender and draining.
- Heat the oil in a skillet and add the chile pepper mole mixture. Add more chicken broth if needed. When it begins to simmer, add the chicken, allow to simmer for a few more minutes, and then remove from heat. Add salt if needed.

Mole means “celebration!” The tastes and smells of this savory, sweet and bitter sauce draws everyone to the table and the kitchen! My husband is from Mexico and says to use corn tortillas for this recipe. I grill my chicken breasts and make sure they’re thoroughly cooked before adding to the mole. Some of our family members keep a lime or sour cream on the side to cool down the heat as they enjoy this dish and others containing mole.
