  • 2 boneless, skinless chicken breasts
  • salt and ground black pepper
  • 1 whole scallion
  • 1/2 red bell pepper
  • 1 cup kale
  • 1 stalk celery
  • 2 tablespoons light mayonnaise
  • 1 teaspoon light sour cream
  • 1 lemon
  • 2 tablespoons fresh cilantro
  • adobo
  • 5 corn tortillas

    Directions

    1. Salt and pepper the chicken breasts and saute, turning, until cooked. Set aside for 5 minutes and then cut into large cubes.
    2. Mix together the mayonnaise, sour cream, lemon juice and rind, cilantro, and adobo. Add the diced chicken, scallion, red bell pepper, kale, and celery.
    3. Mix well and serve in warm corn tortillas.
