Description

Instead of deep-frying chicken as his family did growing up, Marrekus and Krysten Wilkes sear it with Southern spices and add veggies for a one-pot meal. As a shortcut instead of the dry seasonings for the chicken, the Wilkes like to use 2 tablespoons of their “Soul Dust” seasoning, available on their Cooks with Soul website. Note that if you don’t have a 12-inch cast-iron skillet you can use another heavy ovenproof frying pan this size, but you may need additional oil. The recipe is a Yummly original created by Marrekus and Krysten Wilkes of Cooks with Soul.

  • 2 pounds russet potatoes
  • 1 tablespoon kosher salt
  • 1 tablespoon granulated garlic
  • 1 1/2 teaspoons black pepper (coarsely ground)
  • 2 pounds chicken thighs (bone-in, skin-on)
  • 3 tablespoons grapeseed oil (or other neutral cooking oil such as canola)
  • 1 pound baby carrots
  • 3 garlic cloves (minced)
  • 1 tablespoon dried oregano
  • chopped fresh parsley (for garnish)

    Directions

    1. Preheat oven to 400°. Scrub potatoes (no need to peel) and cut into 1-inch cubes.
    2. Combine salt, granulated garlic, and black pepper in a medium bowl. Add chicken and turn to coat.
    3. Set a 12-inch cast-iron skillet over medium-high heat and add grapeseed oil; heat until oil starts to shimmer and smoke a little, 2 to 5 minutes.

    Delicious dish! I have a large family so I increased the ingredients. I also had to brown everything in my large cast iron then transfer to a large baking sheet. That was no problem and I don't feel that it made a difference in the recipe. Other than those accommodations I followed the recipe exactly. I think that adding some purple onion would be a nice addition. Loved it & will make again.

    Love this recipe! It has become a staple in our house. I substitute different veggies and have also used turkey leg quarters and it’s always delicious.

    Good solid dinner. The cast iron pan is a pain to wash, but other than that, the chicken was good and the veggies were good.

    It was great! Very nice combination of fried chicken and veggies. We added broccoli and onions to the veggie mix, but you could kind of customize this anyway you want. We also used sweet potatoes instead of russet potatoes. Good comfort food, and it makes the whole house smell delicious!!!!

    I don’t have a cast iron, but worked well transferring to a deep baking dish from a large sauté pan. Kids loved it, too! Absolutely delicious! Will make this over and over, with varying vegetables.

    This is a pretty good, very easy dish to make. I really enjoyed it preparing it. I would add about 10-20 minutes of cook time to the potatoes or to the oven time so that the potatoes are a little bit softer. Otherwise, it's good.

    meat was perfectly cooked. each step took a little longer than the reccomend time though. also, the chicken skin is very salty. overall great meal

    My family thought it looked gourmet. Power outages for 24 hours from Utah windstorms and subsequent lack of refrigeration may have changed the flavor of the chicken prior to cooking... or was it the recipe? Either way 2020 is not my favorite.

    Very good, but a little heavy on the garlic and salt on the chicken. When we make it again I will most likely reduce the amount of salt and substitute rosemary or something similar for the garlic powder. The minced garlic in the vegetables is plenty for this recipe!

    It turned out very well, although next time I think I’ll brown the chicken for a shorter time so I can leave it all in the oven longer. I think that way the potatoes and carrots will be softer.
