  • 200 grams spaghetti (prepared al dente)
  • 1 cup cooking liquid (reserved, from the pasta)
  • 2 carrots (large, julienned)
  • 1 yellow bell pepper (julienned)
  • 2 tablespoons margarine (light)
  • lemon rind (1 tbp.)
  • 1 1/2 tablespoons fresh ginger (grated)
  • 1 teaspoon pepper flakes (arbol chile, may substitute cayenne)
  • 1 clove garlic (minced)
  • 1/3 cup Parmesan (grated)
  • 2 lemons

    Directions

    1. Melt the butter in a skillet and add the ginger, lemon rind, chile flakes, and garlic. Cook for 1 minute before adding the carrot and pepper.
    2. Saute for 5 minutes until the vegetables are tender. Remove from heat.
    3. Add the pasta, cooking liquid, parmesan, and lemon juice to the vegetable mixture. Stir well.
    4. Serve.
