  • 3 eggs
  • 200 grams sugar
  • vegetable oil (20 cl.)
  • 2 teaspoons cinnamon
  • 1 pinch nutmeg
  • 350 grams flour
  • 2 teaspoons baking powder
  • 400 grams carrots (grated)
  • 100 grams currants (soaked and drained)

    1. 1. Preheat your oven.
    2. 2. Beat the eggs with the sugar. Add the vegetable oil, cinnamon, and nutmeg. Mix. Stir in the flour and baking powder until well combined. Fold in the grated carrots and raisins.
    3. 3. Pour the batter into a silicone cake pan and bake for about 45 minutes.
    4. 4. Remove from the oven and let cool for 10 minutes. Unmold the cake and let it cool completely on a wire rack.
