Ingredients

  • 2 large eggs
  • 3/4 cup milk
  • 1/2 cup water
  • 1 cup flour
  • 1 1/2 tablespoons sugar
  • 1/2 tablespoon ground ginger (or Cinnamon)
  • 1 teaspoon salt
  • 3 tablespoons melted butter
  • butter (for coating the pan)

    Directions

    1. 1. In a blender, combine the first 8 ingredients and pulse for 10-15 seconds.
    2. 2. Heat a small non-stick pan over medium to med-high heat. Add a little butter to coat. Pour about 1-2 oz of batter into the center of the pan and swirl to spread evenly. Cook for about 30 seconds until it loses its raw look) & flip. Cook for about another 10 seconds and remove to a cooling rack. Repeat the process until all batter is gone
