  • 3 tablespoons ghee
  • 2 cups onions (2 large, finely sliced)
  • 1 tablespoon cumin seeds
  • 5 black peppercorns
  • 1 cinnamon bark
  • 5 green cardamoms
  • 1 black cardamom
  • 500 grams chicken breast (cut into pieces, my family prefers boneless, but you can use chicken on the bone cuts or even lamb)
  • 1 tablespoon ginger (grated)
  • 1 1/2 tablespoons garlic (crushed)
  • 2 large potatoes (each cut into big chunks and soaked in water till needed)
  • 1 chicken stock cube
  • 1/2 teaspoon Garam Masala
  • 1 tablespoon cumin powder
  • 1 tablespoon corriander (powder)
  • 3 chillies (green birds eye)
  • 3 bay leaves
  • 1/2 teaspoon salt
  • 2 1/2 cups basmati rice (or sella, rinsed at least twice and left to soak in luke warm water for at least 30 minutes)
  • 4 cups boiling water (750ml -1 litre)
