  • 1 red onion (cut into chunks)
  • 2 red chillies (stalks removed and cut into three)
  • 50 grams fresh ginger (/1¾oz, peeled and cut into thick coins)
  • 2 garlic cloves (halved)
  • 15 grams fresh turmeric (/½oz, peeled and roughly chopped, or 1 tsp ground turmeric)
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon sea salt flakes (or to taste)
  • 2 tablespoons coconut oil (or vegetable oil)
  • 400 milliliters coconut milk
  • 350 milliliters vegetable stock
  • 400 grams chopped tomatoes
  • 500 grams sweet potatoes (peeled and cut into large bite-sized pieces)
  • 1 butternut squash (large, peeled, de-seeded and cut into bite-sized pieces)
  • 300 grams rice (/10½oz black Venus, to serve)
  • 1 handful coriander (roughly chopped)
  • 2 limes (cut into wedges)

    Rather nice indeed! ...I added chickpeas as well for protein! A bit time consuming but well worth the effort!
