  • 1 small yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 zucchini (small, diced)
  • 1 red bell pepper (diced)
  • 1 pound boneless, skinless chicken thighs (or breasts, cut into bite sized pieces, you could also use leftover, shredded chicken)
  • 2/3 cup avocado oil
  • 1 egg (preferably pasture-raised)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon sea salt
  • 3/4 cup hot sauce (I used Tessemae’s Buffalo, but any clean hot sauce would work)
