  • 4 boneless skinless chicken breasts (5 to 6 ounces each)
  • 1/4 cup Mazola Corn Oil
  • 2 tablespoons balsamic vinegar
  • 2 garlic cloves (finely minced)
  • 1 tablespoon Spice Islands Italian Herb Seasoning
  • 1/2 teaspoon Spice Islands Fine Grind Sea Salt
  • 1/4 teaspoon Spice Islands Fine Grind Black Pepper
  • 2 cups plum tomatoes (diced)
  • 1/4 cup diced red onion
  • 1/2 cup italian blend cheese (shredded)
  • 1/4 cup fresh basil (finely chopped)

    Directions

    1. Place chicken breasts in a large resealable plastic freezer bag, one at a time.
    2. Lightly pound chicken breasts to an even thickness of about 3/4-inch.
    3. Combine oil, balsamic vinegar, garlic, Italian herb seasoning, salt and pepper in a small bowl and whisk until combined.
