  • 3 tablespoons butter
  • 2 slices bacon (coarsely chopped)
  • 2 slices ciabatta (cut into 1/3 inch pieces)
  • 1 clove garlic (minced)
  • 1 tablespoon baby capers (rinsed)
  • 1 tablespoon flat leaf parsley leaves (fresh, finely chopped)
  • 4 soft-boiled eggs (quartered)

    Directions

    1. Cook broccolini until tender. Drain.
    2. Meanwhile, melt butter in large frying pan. Cook bacon until crispy. Add bread and garlic. Cook, stirring, until bread is golden brown. Add capers and parsley and toss to combine.
    3. Divide broccolini between serving plates. Top with bacon mixture and eggs.
