  • 1 kilogram chicken thigh (or whole chicken, chop to pieces)
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 tablespoon light soy sauce
  • 1/2 tablespoon dark soy sauce
  • 1 tablespoon sesame oil
  • 1/2 tablespoon ginger juice
  • 1/2 tablespoon cooking wine (Hua Tiao Chiew)
  • 3 tablespoons sesame oil
  • 20 grams ginger (shredded)
  • 2 tablespoons dark soy sauce
  • 350 milliliters water
  • 1 tablespoon corn flour (+ 2 tbsp water as thickening)

    Directions

    1. Heat up 3 tbsp sesame oil in wok and saute shredded ginger until fragrant.
    2. Add in chicken thigh together with the sauce with extra 2 tbsp dark soy sauce and stir fry until aromatic.
    3. Add in 300ml water, boil and lower heat~cover~simmer for about 25-30 minutes.
    4. Lastly thicken with corn flour water and serve.
