Used whole wheat tortillas instead of corn and didnt have chili so I used cajun: turned out pretty good! would omit the cilantro next time but thats just because Im not a huge fan of it.

Great recipe! However very spicy! I recommend half the chili powder if you’re you prefer mild or medium.

Very nice! Changed the recipe a little - added finely chopped shiitake mushrooms in with the onion; used two tins of black beans and half a tin of kidney beans. There wasn’t much sauce so added a small amount of water to loosen the bean mix up.

Very delicious, although I might’ve cooked the tomato bean mixture too much so I had to make the sauce by just adding the spices to extra puréed tomato. My step father who absolutely hates tomatoes and overall veggie like foods, absolutely loved this dish.

I did not make this as a vegan recipe. Basically I used canned enchilada sauce, and real cheese. I used the recipe for the beans as a guide and cooked canned beans with onions, cumin, chili powder and crushed red pepper. The idea was to make a healthier enchilada not necessarily a vegan one. Delicious!

It turned out well. I had some trouble with the tortillas breaking and ended up stacking them which worked great. Will definitely use more spices in the future as it was a little too mild.

Being a vegan myself I must say I love your recipes however they need some tweaking to be truly a vegan meal. When representing the vegan community you may want you note: Canned tomato paste or canned tomato puree has been processed Using animal bone shard used in refining the sugar cane. making puree or sauce from scratch is "best choice".

This is very good! I had some trouble because my bean mixture was very thick and I didn’t have enough sauce after straining so I added a little water to the sauce I had and that did the trick. I am thinking it’s the type of tomato I used. I also used flour tortillas because I’m not a fan of soft corn.. Overall really tasty!
