  • 3 kilograms beef for stew (cut into large cubes, 4-5 cm)
  • 1 chopped onion
  • 3 Tbsp. flour
  • 8 oz. dry white wine
  • 3 Tbsp. balsamic vinegar
  • 1 can tomato paste
  • 1 Tbsp. soy sauce
  • 2 garlic cloves (with skin)
  • thyme sprigs (Fresh)
  • 1 bay leaf

    Directions

    1. Heat the oven to 180 degrees Celsius.
    2. In a cast iron dutch oven, melt 25gr.of butter and sauté the meat (on several batches) over high heat.
