  • 2 large eggs
  • 1 cup milk (dairy or dairy-alternative)
  • 3 tablespoons unsalted butter (melted)
  • 4 tablespoons unsalted butter
  • 2 tablespoons light brown sugar
  • 1/2 teaspoon cinnamon
  • 1 pinch fine sea salt
  • 2 teaspoons spiced rum
  • 2 cups bananas (sliced)
  • 1/4 cup walnuts (or pecans, pieces)

    Directions

    1. Whisk together the flour, baking powder, and salt in a large mixing bowl.
    2. Make a well in the bowl by pushing the dry ingredients along the sides. In the center, mash the banana with a fork until very smooth.
    3. Whisk in the eggs, milk, and melted butter and continue to combine all of the ingredients until mixed well.
