  • 2 1/2 teaspoons baking powder (make sure it hasn’t expired; see Notes)
  • 1/2 teaspoon salt
  • 1/3 cup butter (chilled or frozen, or shortening or a combination of the two, 1/3 cup is 5 tablespoons plus about 1 teaspoon – you can use 5 or 6 tablespoons if you prefer; see Notes for more information on combining butter and shortening)
  • 3/4 cup milk (whole is great but skim works; may need a bit more or less; see step 5 in Procedure)
