  • 110 grams unsalted butter
  • 3 large eggs
  • 110 grams caster (superfine sugar)
  • 100 grams ground almonds
  • 1 teaspoon essence (level almost)
  • 7 teaspoons raspberry jam
  • 225 grams fresh raspberries
  • 25 grams flaked almonds
  • 250 grams plain flour
  • 2 tablespoons powdered sugar
  • 125 grams butter (chilled)
  • 2 tablespoons ice cold water
  • 1 large egg yolk (plus the white, lightly beaten)

    Directions

    1. First, make the pastry. Sift the flour and icing sugar into a large bowl. Cut the cutter into small cubes, cut the butter into the flour, then rub lightly with your fingertips until the mixture is the consistency of coarse breadcrumbs.
    2. Mix the egg yolk with the ice-cold water, add to the pastry mix, mix lightly and pull together in a ball, adding extra water if needed. Shape into a flat disc and refrigerate for at least half an hour. (You can also, of course, make this in the food processor).
    3. Roll out the pastry into a circle large enough to fill a 9-inch pie pan with a bit of overlap. Carefully lower the pastry into the tin, pressing it lightly into the sides and cut off the excess pastry around the edges. Prick the base lightly and chill the pastry case while you preheat the oven to 200 degrees C/ 400 degrees F.
