Baked Gnocchi with Spinach and Prosciutto

  • 1 1/2 pounds gnocchi
  • 5 cups baby spinach
  • 3 1/2 ounces prosciutto (cut into strips)
  • 8 3/4 ounces mascarpone
  • 1 ounce Parmesan cheese (grated)

    Directions

    1. Cook gnocchi in boiling, salted water according to package directions. Drain.
    2. Toss gnocchi with spinach, prosciutto and mascarpone. Transfer to a baking dish. Season and top with Parmesan. Place under broiler for 4-5 mins, until heated through and top is golden. Serve hot.
