  • 4 potatoes (scrubbed and cut into thick wedges)
  • 2 tablespoons olive oil
  • 1 leek (small, thinly sliced)
  • 1 zucchini (halved and thinly sliced)
  • 1/4 cup sun-dried tomatoes (coarsely chopped)
  • 4 white fish fillets

    Directions

    1. Preheat the oven to 400°F. Place potatoes in a large baking dish. Toss with oil. Season to taste.
    2. Bake 20 mins. Sprinkle leeks over potatoes.
    3. Bake 5 mins. Add zucchini and tomatoes; stir until combined. Place fish on top.
    4. Bake 10-15 mins until fish flakes when tested with a fork. Serve with lemon wedges.

    I was able to wing it but this recipe is just a list of ingredients no directions. So it was an experiment and not great therefore a waste of money on the food.

    Delicious, light and easy to prepare. Did not have leek or sun dried tomato, so used onion and fresh tomatoes instead.

    It's so delicious, guys. I didn't use zucchini and lemon plus I'm adding blackpepper for seasonal but it's already great. Thank you for your masterpiece!
