  • 1 teaspoon Ras el hanout spice mix (see notes)
  • 1 tablespoon olive oil
  • 100 grams quinoa (dry weight just over half a cup)
  • 2 avocados (medium ripe, peeled, stones removed then chopped)
  • 2 stalks celery (chopped)
  • 1/2 cucumber (180g chopped)
  • 180 grams cherry tomatoes (1 1/4 cups cut in half)
  • 1 handful flat leaf parsley (finely chopped)
  • 1 shallot (medium echalion, banana shallot finely chopped)
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon wholegrain mustard
  • 80 milliliters extra virgin olive oil (1/3 of a cup)
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon sea salt (ground)

    Delicious! The roasted chickpeas with the Ras el Hanout seasoning is a must. I added radish too.

    Tasty and refreshing. The dressing was a little bitter, but perhaps a couple of drops of honey would clean that up. Overall a nice change!
