  • 2 cucumbers (small, I used Lebanese as they have thinner skin, sliced into half moons)
  • 1 pepper (Romano, sliced thinly)
  • 2 spring onions (small, sliced thinly)
  • 1 handful mint (AND/OR coriander)
  • 1/4 cup peanuts (roasted, unsalted, OR cashews)
  • 1/4 cup tamari (for GF version OR soy sauce)
  • 2 tablespoons maple syrup
  • 2 tablespoons rice vinegar (or lime juice)
  • 1 tablespoon toasted sesame oil (for flavour)
  • 1 tablespoon oil (neutral tasting)
  • 1 garlic clove (small, finely grated)
  • 3 teaspoons chilli paste (I used Indonesian sambal oelek, adjust to taste)
